The Ultimate Vegan Hack Cake

I know I know, how many times have you heard ‘THIS is the easiest vegan cake’ and then are told to buy 25+ ingredients, half of which you’ve never even heard of?? Well this time, when I say it’s the easiest vegan cake, I really mean it.

And my secret ingredient? A can of coke… no, I’m not joking. This is so easy I almost feel like I am cheating you out of a ‘real’ recipe this month, but this is the ULTIMATE Vegan cake hack… and it works a treat!

Ingredients 

  • A box mix of chocolate cake (Don’t come at me, this is the only way I have made it work)

  • Baking Powder

  • Betty Crocker premade chocolate icing tub (this brand is actually vegan!)

  • A can of 330ml Coke

  • Oreo biscuits to decorate

Method

  1. Preheat the oven to 180, it’s really important to have a hot oven because the gas bubbles in the coke are what makes the cake rise! If the oven is too cold, it will deflate, and your cake will be more like a rubber ball. Grease and line an 8” tin, you can do it in 2 tins to layer them together or like I did in 1 larger tin, which is then cut in half.

  2. Put all the dry cake mix ingredients into a bowl and whisk together to combine them all. Sift in a tsp of baking powder.

  3. When the oven is fully heated, pour the can of coke into the dry ingredients and whisk together to form the cake batter. Once all dry ingredients are combined, pour the mixture into the lined tins and bake in the oven for 18-30 mins depending on whether you used one tin or two.

  4. Once the cake is cooked (you can stick a toothpick in and it comes out clean) leave to cool for 10 mins and then transfer onto a cooling rack.

  5. If you have cooked the cakes in one tin you’ll need to cut it in half at this point so we can layer the cake with icing. 

  6. Put the first layer of cake on your plate or cake stand and put a layer of icing onto it and smooth it over. Put the second cake on top and again layer your icing over it. I recommend using an offset palette knife if you have one, if not a regular palette knife or a spoon would also work.  

  7. On my cake, I went for the ‘semi naked’ look so I spread the icing down the sides of the cake whilst turning the cake stand, and repeat this until you have only just covered the cake. If you prefer you can use more icing and cover the whole thing, so no cake is peeking through at all.

  8. Once you’re happy with the icing you can decorate however you want! I piped small rosettes onto mine using an open star-shaped piping nozzle, you simply make a small swirl on the top of the cake. I then topped mine with Oreo halves, but you could also use sprinkles, chocolate pieces, 100s and 1000s etc.
