Mama Howard's Coffee Brownies

In the Howard Family, May is a month of celebrations from the 3rd until about the 28th! This year we should have been together for 7 birthdays and a couple of anniversaries too but with the world as it is all parties have been postponed, and any idea of family gatherings have gone out of the window (for now). One thing that is always on the table at a Howard Family gathering is my Mum’s infamous Coffee Brownies. She has been making them for YEARS, cousins and family friends request them weeks before arrival to ensure they don’t miss out, they’re THAT good…

Ingredients

  • 75g butter

  • 125g soft light brown sugar

  • 75g soft dark brown sugar

  • 1 tablespoon instant coffee

  • 1 large egg

  • 150g plain flour

  • 1 teaspoon baking powder

  • 150g plain chocolate

Method

  1. Preheat the oven to 150℃ or Gas Mark 4 and line a 20cm shallow square tin with parchment paper. You can use a small amount of butter on the end of your finger to stick the paper into the tin so it doesn’t slip.

  2. In a saucepan heat the butter with the sugars over a medium-low heat until the butter has melted.

  3. Dissolve the instant coffee with an equal amount of hot water, mix it and add it into the saucepan, then remove from the heat. (If you have a fancy espresso machine this would also work beautifully).

  4. Leave the mixture to cool for at least 15 mins to ensure it is lukewarm, then whisk in the egg (if you do it whilst it’s too hot the egg will cook and turn into scrambled egg). Whilst it cools chop the chocolate pieces into small chunks, I usually ¼ a square of the bar. 

  5. Sift in the flour and baking powder into the mixture and stir it until all the flour is combined, then add the chocolate pieces and stir again until combined. 

  6. Pour the mixture into your prepared tin and bake it for 22 mins. When you remove it from the oven leave it alone for 10 mins whilst it ‘sets’ and cools. Cut it into squares and cool on a wire rack, or if you’re like me eat it warm with a good serving of ice cream!
