Better Than Sex Pancakes Recipe
This pancake recipe is about to put an end to all other pancakes you’ve ever attempted to make. Move over Jamie Oliver and your ‘all in one mug’ recipe, there’s a newer, fluffier pancake in town.
I have spent years of my life trying pancake recipes and I truly feel I’ve found perfection here, it makes the right amount for 2 people- very handily only uses one egg, and is the perfect mix of thick, but light and fluffy!
Ingredients
110g self raising flo
50 icing sugar
1 egg
140ml milk
2 tbsp vegetable oil
Method
Weigh out the dry ingredients into a bowl and sift to get rid of any lumps.
Measure the milk into a jug and crack the egg into it afterwards. Add the oil and whisk together thoroughly with a fork until light and frothy.
Pour the wet mixture into the dry and whisk thoroughly to ensure there are no lumps of four left at the bottom.
Heat your pan up, I use a non-stick pan on a medium heat with no oil to get that ‘perfect’ pancake look, but if you’re new to this I would suggest starting with a lightly oiled pan. Put a spoonful of mixture into the pan, pour the mixture directly downwards off the spoon to create the perfect circular pancake. Let it cook until you see small bubbles form on the top, flip it over and cook for another few mins on the other side.
Serve with butter, maple syrup and fresh berries, and enjoy!!
