Chocolate Tiffin Recipe

This Tiffin recipe is all you really need to brighten up another day in lockdown 3.0, full of chocolate and biscuits and ready to eat in less than an hour! You can thank me later…

Ingredients 

  • 150g unsalted butter

  • 3 tbsp caster sugar

  • 3 tbsp golden syrup

  • 6 tsp cocoa powder 

  • 225g crushed digestives

  • Handful of sultanas

  • 1 bar of Cadbury’s

  • 1 bar of Dark Chocolate

Method

  1. Grease and line a square pan with parchment paper and set it aside for later. In a small saucepan melt the butter, sugar, golden syrup and cocoa powder and mix well until it has been combined.

  2. With a rolling pin crush the biscuits into smaller pieces, but don’t go too far that all you have is crumbs!

  3. Mix the buttery cocoa liquid into the crushed biscuits, add the sultanas and stir them together until the biscuits have been coated. 

  4. Put the biscuit mix into your prepared tin and squash down into all the corners. As the mix will still be hot I often put the mix into the freezer whilst I do the next step, to speed up the process. If there is no room in the freezer the fridge is of course also fine, it just will take a lot longer to set.

  5. To melt the chocolate for the topping you can either microwave it in small bursts or melt it in a glass bowl over a small pan of boiling water, which I find works a lot better!

  6. Once the chocolate has melted pour it over the biscuit mix and flatten it with a pallet knife or spoon. Let it set in the freezer for an hour or so, then cut it into pieces with a hot knife.
