Ultimate Cheesy Scones with Home Made Garlic Butter

I don’t bake savoury food all that often but when I do, it just HAS to be warm cheese scones with lashings of garlic butter. 

Ingredients

for scones

  • 225g self raising flour

  • Pinch of salt

  • Ground pepper

  • 1 tsp baking powder

  • 55g butter

  • 120g grated cheddar cheese

  • 90-100ml milk

for garlic butter

  • 100g slightly melted butter

  • 1 clove garlic

  • Handful of parsley 

Method

  1. Heat the oven to 180.

  2. Sift the flour salt, pepper and baking powder together and stir through to make sure it’s well combined

  3. The butter needs to come straight out of the fridge, cut into cubes and then rubbed into the flour mixture. Do this with your fingers or a pastry blender until it looks like fine breadcrumbs. Try not to overmix as this will start to melt the butter.

  4. Add in the grated cheese and mix together with the end of a knife.

  5. Make a well in the middle of the mixture and slowly pour the milk in a little at a time. I use a knife to bring it together into a dough and stop adding the milk once together.

  6. Lightly flour a surface and roll the dough out to about 6cm thick, and cut into circles with a cutter or a glass. 

  7. Spread out the scones onto a baking tray so there is plenty of room between each one, glaze with milk and top with a little grated cheese and bake for 15-20 mins. 

  8. For the garlic butter simply melt the butter (VERY gently) so it is soft but not runny. Crush a clove of garlic and chop the parsley finely, mix it into the butter and leave to cool/ set.

  9. The best way to enjoy these is hot out of the oven with plenty of garlic butter! I have also found that leftover butter on a baked potato is an absolute game changer!
