10 Questions With: New Cut Coffee
I’m not overstating it when I say that one of my favourite things about living near Wapping Wharf is New Cut Coffee. If I could spend every morning there, I would.
This might sound like a Maybelline advert, but maybe it’s the smell of the coffee as soon as you walk in. Maybe it’s the consistently great music. Maybe it’s the attention to detail in every small aspect (just take a look at the graphics on the coffee they sell). Or maybe, just maybe, it’s because they’re worth it.
Genuinely, doing the 10 Questions With New Cut was a joy. They’re exactly the kind of business we love to champion: independent, full of personality, and genuinely warm. Bristol has no shortage of beautiful coffee shops, but New Cut will always be my favourite. Pair their banana bread with espresso butter with the welcome you get from the team, and you might just have found heaven on earth.
We spoke to Jack, the co-founder of New Cut Coffee, and it’s a pleasure to stop writing - and let him do the talking instead.
1. If your house blend were a person, what kind of personality would it have and what would it order?
A Mediator on the Myers Briggs spectrum. Well rounded, thoughtful, and friends with people from all walks of life. They would probably order something balanced and classic, like a flat white.
2. Three words to describe New Cut. Go!
Friendly neighbourhood coffee.
3. What is New Cut’s origin story?
Katie and Jack spent years working in another local coffee shop, always talking about opening a place of their own. During the pandemic, we were incredibly fortunate that an opportunity came up and we took it.
4. What makes a good coffee shop?
The calibre of coffee in Bristol is already so high, so what really makes a place stand out is the people in it.
5. You have a day to spend only in Wapping Wharf. What are you doing and where are you going?
I spend most, if not all, of my days in Wapping Wharf anyway, but on a treat myself day I would go and see Luke at The Cheese Connection, maybe head to Bagelry Box for a breakfast treat, then stop by Bookhaus or Fig 1.
On an admin day, I would nip into Fig 1 for a new notebook to scribble coffee notes, get a trim at Chop Box, grab a glass of wine at Porto, and head to Root for dinner.
6. There is always a banging playlist on at New Cut. What is the perfect song to listen to with your morning coffee?
High Pressure Day by The Units. Paired with dialling in three espressos, there is nothing that wakes me up better.
7. Your favourite thing about running New Cut?
Having something you can really pour yourself into, from the prints and trinkets on the shelves to the way the whole team has done the same.
8. New Cut was founded in 2021. What have you learnt since then?
All the locals’ names, and that there is always more to learn.
9. There are lots of great movie posters around New Cut. Which movie character would definitely be a regular?
Jack Burton from Big Trouble in Little China. He is a truck driver, so I would definitely try to make us his regular stop. And honestly, the whole crew from The Warriors too.
10. You can only have one sweet treat with your coffee for the rest of your life. What are you choosing?
Banana bread with espresso butter.
